
Every morning, we bake fresh sourdough bread, black wheat sourdough bread, focaccia, croissants, and many other sweet and savoury pastries in our oven. You can try to resist, but it’s impossible. (And trust us, we’ve tried!)

WE ARE 55 BAKERY
A PURELY CZECH ARTISAN BAKERY.
Every day, the aroma of freshly baked bread and pastries fills our bakery — all baked by us in our oven one floor below. The foundation of our goodies is honest craftsmanship and time, because that’s exactly what good dough needs.
You’ll also find four simple breakfasts, great coffee, and a space where you can relax, have a chat, or tick a few things off your to-do list.

IF THERE’S ONE THING WE REALLY KNOW HOW TO DO, IT’S BAKING.
Bread needs time — and we give it plenty of it. We never rush the process and always stay patient. Our loaves mature for many hours and are baked exclusively with sourdough starter, which gives them a deep aromatic flavour, a crispy crust, and a soft, airy crumb.
Every piece of baked goods passes through the hands of our bakers — from the very first mix to the moment it comes out of the oven or gets its final decoration. The result is pastries so good you’ll eat every last crumb. And they stay delicious for several days (if you can resist finishing them sooner).
QUALITY AND LOCAL INGREDIENTS. EVERYTHING ELSE COMES SECOND.
Because we believe great bread starts with healthy soil and quality grain, we bake using flour from the Czech Mlýn Dubecko — made from Czech organic wheat and rye, together with our own wheat-rye sourdough starter. We source our ingredients from Czech farms that care about animal welfare and sustainable farming. And many of these products can also be purchased directly at our bakery.
BELIEVE IT OR NOT, WE’RE BIG ON SUSTAINABILITY.
We support Czech farmers and growers, and we don’t see the point in shipping ingredients halfway across the world when our own countryside offers so many great things. Any leftover baked goods are given to our suppliers as animal feed. We do our best to leave behind nothing but happy taste buds — not waste.


COFFEE? THAT’S OUR CUP OF COFFEE.
We work with the Czech roastery Nordbeans, which supplies us with specialty coffee for both espresso and filter brew. For espresso, we serve their Horizont blend, and we also enjoy experimenting with seasonal varieties. We always offer two filter coffee options, so there’s always something to choose from.
